  • 1 pound mild Italian sausage
  • 1 pound ground beef
  • 4 cloves garlic, minced
  • 1/4 cup Italian bread crumbs
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1 egg
  • 1 jar good quality tomato sauce
  • 1 pound spaghetti
  • parmesan cheese to top
  • fresh basil to top

Directions:

  1. Combine all the ingredients for the meatballs in a mixing bowl.
  2. With a 1 oz scoop, scoop the meatball mixture into balls and roll softly. Place on a foil lined baking sheet.
  3. Scoop the remaining meatballs and set aside until you are ready to make the dish.
  4. Preheat a large cast iron skillet over medium high heat.
  5. Add 1-2 tablespoons of oil and sear the meatballs on all sides until caramelized and brown. Don’t worry if they are not cooked all the way through. You will finish cooking them in the sauce.
  6. Add the sauce and cook the meatballs for 10 minutes while you prepare the pasta.
  7. Bring a large stockpot of water to a boil.
  8. Add a couple of tablespoons of salt to the boiling water and add the pasta. Cook to package directions.
  9. When the pasta is done and al dente (to the tooth) reserve about a cup of the pasta water.
  10. Then strain the pasta and add directly into the meatballs and sauce.
  11. Toss to combine completely. You can add the remaining pasta water if it is too thick.
  12. Transfer the pasta and meatballs to your serving plater and then top with grated parmesan cheese and fresh basil.
