We love using our sourdough starter to make so many things! It provides amazing health benefits and you can use it for almost any baked good. These sourdough waffles are no exception!
You can make the batter the night before. Then just let it sit out at room temperature overnight. Add a few ingredients the next morning and you are all set.
The best part about this recipe is you can change up the batter by adding chocolate chips, bananas, or even blueberries.
You can also top these waffles with a variety of toppings. Or make them for a family get together and create a waffle bar like this one.

How To Make Sourdough Waffles:
In a large mixing bowl combine overnight sponge.
Add the flour honey, sugar, or maple syrup to the bowl.
Then add buttermilk (or you can sub for almond or coconut milk).
Lastly, add the sourdough starter. Stir to combine and then cover the bowl with saran wrap and let sit overnight.
The next morning add eggs, melted butter, salt and baking soda to the sponge. Stir to combine. You are now ready to use the waffle batter.
To make the waffles preheat your waffle iron. Add about 1/2 cup of batter to the machine and cook until lightly golden brown.
Top the waffles with syrup, butter or toppings of choice.

Ingredients
Overnight Sponge:
- 3 tablespoons honey
- 2 cups coconut milk or buttermilk
- 1 cup bubbly active sourdough starter
- 2 cups all purpose flour
The Next Morning:
- 2 eggs
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla bean paste or extract
- 1/2 cup melted butter (or you can substitute with coconut oil or avocado oil)
- Toppings of Choice
Instructions
- Preheat the waffle machine. Add honey to a mixing bowl.
- Add buttermilk or other milk.
- Add the active sourdough starter.
- Add the flour.
- Stir to combine, cover and leave out overnight.
- The next morning add eggs, baking soda, salt, vanilla and oil or melted butter.
- Whisk to combine.
- Spray the waffle machine with cooking spray and add about 1/2 cup batter to the machine.
- Cook until ready and light turns green.
