These cranberry chicken salad sandwiches are one of my new fall favorites! I make this chicken salad to put on croissant sandwiches or as a snack with some pita chips. It’s so delicious and I can’t wait for you to try it out! Seriously, trust me on this one.

  • Chicken or Leftover Turkey
  • Celery
  • Cranberry Sauce
  • Greek Yogurt
  • Mayonnaise

How to make chicken salad healthier:

It’s a healthier version than regular chicken salad because I substitute most of the mayo with plain non-fat Greek yogurt. You can substitute all of the mayo if you prefer!

Can I use cranberry jam or leftover cranberry sauce?

You can use any cranberry jam, compote, or sauce for this recipe. I wouldn’t recommend using fresh cranberries, but any other form works great.
 
The cranberry sauce adds such an amazing flavor and it literally will become your new favorite way to enjoy chicken salad. It’s a quick, easy snack or lunch and you can make a big batch to eat throughout the week.

Can you freeze chicken salad sandwiches?

I find that chicken salad sandwiches are best when made fresh. I do not recommend freezing the sandwiches, but you can make them ahead of time if you are in a pinch.
 
You can make the chicken salad up to 4 days in advance. Store in an airtight container with a layer of plastic wrap directly on the chicken salad.
 
When you are ready to make the sandwiches, add a little extra Greek yogurt or mayonnaise to moisten the salad. Chicken salad tends to dry up a little as the chicken absorbs the wet ingredients.

What is a good side dish for chicken salad sandwiches?

I love serving chicken salad sandwiches with homemade potato chips, my Nuts About Berries Salad, or a fresh fruit salad. They are perfect for brunch, lunch, or a quick and easy dinner.

Ingredients

  • 2 Cups Rotisserie Chicken, Diced
  • 1 Cup Celery, Diced
  • ½ Cup Greek Yogurt
  • 2 Tablespoons Mayonnaise
  • ½ Cup Cranberry Sauce (from Trader Joe’s)
  • 1 Teaspoon Kosher Salt
  • ½ Teaspoon Black Pepper

For the Sandwiches

  • 4 Croissants
  • Lettuce
  • Extra Cranberry Sauce, if Desired


Instructions

    1. Mix all of the ingredients in a small mixing bowl to combine. 
    2. Place desired amount of chicken salad in croissants with lettuce and extra cranberry sauce.

Notes

This can also be served as a dip with pita chips or gluten-free crackers.
