Mexican cauliflower rice salad is the perfect side dish or main dish for the next time you are craving a healthy dish. It’s full of flavor and can be served cold or warm.

Riced cauliflower is tossed with sweet peppers, red onion, crunchy jicama, cilantro and cotija and topped with crunchy bacon. It’s all combined with a zesty lime dressing consisting of lime juice, lime zest, agave, cumin, and chili powder. 

This Mexican cauliflower rice is healthy and delicious! I love serving it with my Easy Instant Pot Recipe: Pork Carnitas and Easy Grilled Mexican Street Corn. Because it’s so full of flavor it can be served as a side or on it’s own. 

Riced cauliflower is all the craz right now and I am jumping on the bandwagon because it really does taste so dang good!  I have been messing around a lot lately with riced cauliflower making pizza crust, salad, bowls, fritters, you name it.

This recipe has been a consistent favorite of mine for the last couple weeks. And I am not mad about it!

Where To Buy Riced Cauliflower:

I buy riced cauliflower at Trader Joe’s. It comes fresh or frozen. I have seen it also at Costco and other major grocery stores. Because it has become more and more popular it’s pretty widely available.

What If I Can’t Find Riced Cauliflower:

If you can’t find cauliflower already riced you can make it yourself pretty easily. To make riced cauliflower place the  cauliflower florets in a food processor and pulse 5-10 times until you get the consistency of rice.

How to Make Mexican Cauliflower Rice:

  1. Bring about 6 cups of water to a boil in a saucepan. Add riced cauliflower and cook for 5-7 minutes.  Drain and place in your mixing bowl.
  2. Add the rest of the ingredients to the cauliflower.
  3. Place dressing ingredients in a small mason jar, seal with the lid and shake to combine. 
  4. Add to the cauliflower mixture and stir to combine. Serve warm or cold.

Fresh, healthy riced cauliflower flavored with Mexican flavors! It's the perfect side or main dish.

Ingredients

  • 1 Pound Bag Riced Cauliflower
  • 1 Tablespoon Red Onion, Diced
  • 1/4 Cup Mini Sweet Peppers, Sliced Thin
  • 2 Tablespoons Jicama, Diced
  • 1/4 Cup Gluten Free Bacon, Cooked And Roughly Chopped
  • 1 Tablespoon Cilantro, Chopped
  • 2 Tablespoons Cotija Cheese (If you are dairy free you can leave this off)
  • 1/4 Cup Pico De Gallo Salsa, (buy your favorite safe brand)

Dressing Ingredients:

  • 1 Teaspoon Lime Zest (about 2 limes)
  • 1/4 Cup Lime Juice (about 3 limes)
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Agave
  • 1/2 Teaspoon Kosher Salt
  • 1/2 Teaspoon Chili Powder
  • 1/4 Teaspoon Cumin


Instructions
