Al Pastor Marinade:

The tasty pork skewers have a flavorful marinade that adds spices and aromatics to the meat.

It is smoky, citrusy and has such a delicious balance of flavors.

Here’s what you’ll need for the marinade:

Honey: Adds a delicious slightly sweet flavor to the pork. You can also substitute brown sugar or agave if desired.

Garlic Salt, Oregano, Cumin, Salt, Fresh Garlic: Adds delicious flavor to the pork skewers.

Achiote Annatto Paste: A must for al pastor. Achiote paste gives the pork it’s bright red color and smoky flavor. You can find this at most markets in the Mexican food isle or check out this link to buy it online.

Orange Juice and Zest: Adds a delicious citrus flavor.

Pineapple: Crushed pineapple adds a sweet flavor. You can also use pineapple juice if you have some on hand. I use a few pineapple cubes from the skewers and crush them with my hands for the marinade.

Now let’s move onto how to prepare the skewers.

Preparing the Grilled Pork Tenderloin Skewers:

To ensure tender and succulent skewers, follow these steps for preparing the pork tenderloin:

  • Trim any excess fat and silver skin from the pork tenderloin.
  • Cut the tenderloin into 1-inch thick medallions, ensuring they are relatively uniform in size for even cooking.
  • Place the pork medallions in a large resealable plastic bag or a shallow dish.

Marinating the Pork:

Marinating the pork is key to infusing it with the vibrant flavors of al pastor. Here’s how to do it:

  • In a bowl, whisk together all the marinade ingredients until well combined.

  • Pour the marinade over the pork medallions, making sure each piece is thoroughly coated.
  • To enhance the flavor, refrigerate the bag or dish for at least 2 hours or overnight. This will allow the flavors to soak into the meat.

Skewering and Grilling Pork Tenderloin Al Pastor Skewers:

Once the pork has marinated, it’s time to assemble the skewers and get grilling:

  • Preheat your grill to medium-high heat.
  • If using wooden skewers, soak them in water for about 30 minutes to prevent burning. Or use metal skewers.
  • Thread the marinated pork medallions onto the skewers, leaving a small space between each piece.

  • Place the skewers on the preheated grill and cook for approximately 8-10 minutes. Turn the al pastor kabobs to grill each side. Cook until the pork is cooked through and has a charred exterior.
  • Baste the grilled skewers with any remaining marinade during grilling to enhance the flavor and keep the meat moist.
  • Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.

Avocado Creama:

Avocado Creama

These al pastor pork tenderloin skewers go perfectly with creamy avocado creama. It adds a slight tangy flavor and is the perfect addition to any way you serve them.

To make the creama blend together avocado, Mexican creama, salsa verde and cilantro. I like to use a small food processor, but you can also use a high powered blender.

Blend the ingredients until smooth and set aside. This creama is amazing on tacos, skewers, or even as a delicious egg topper in the morning.

Make a big batch and save the leftovers to eat with chips and salsa the next day.
