Where to buy filet mignon:
I like to buy my filets at Costco. The quality is really great and it’s the cheapest place that I have found to buy them. Look for evenly cut filets so that the filets all cook at the same time.
What to season filet mignon with:
I use kosher salt and freshly cracked black pepper to season filet mignon.
I like to use kosher salt because the granulars are flatter and coat more surface area of the steak.
You can also use a smoked black pepper to give the meat a little bit of a smoky flavor.
What pan to use:
A great pan to cook filet mignon is cast iron. Cast iron is a great heat distributor and can go straight into the oven (which is an important step for cooking filet at home).
If you don’t have a cast iron pan you can use any pan that can go into the oven for this recipe.
How will I know when my filet is done to my liking:
To check your steak you will want to take the internal temperature by using an instant read thermometer. Stick the thermometer in the center of the steak (through the side) to check for doneness.

How to cook it perfectly in the oven:
Step 1: Let the filets sit out at room temperature for 30 minutes. This will help the filet to cook more evenly and to stay juicy.
Step 2: Preheat the oven to 400 degrees F.
Step 3: Dry the filets with a paper towel. This will help to get a nice crust on the filet instead of steaming them in their own liquid.
Step 4: Brush with avocado oil and season with kosher salt and fresh cracked black pepper. It is important to use a high smoke point oil for this to ensure the oil does not burn. I also recommend kosher salt because the salt granular is larger, yet flat and seasons the meat evenly.
Step 5: Preheat your cast iron skillet over high heat until hot, but not yet smoking.
Step 6: Add the filets (being careful not to crowd the pan) and sear on each side for 3-4 minutes or until browned.
Step 7: Transfer the cast iron skillet straight to the oven to finish cooking the filets for 10 minutes. Take the internal temperature of the steaks by inserting an instant read thermometer in the side of the steaks until it is in the center. Refer to the temperature chart above to achieve desired doneness.
Step 8: Remove the filets from the oven, place on a plate, lightly tent with foil and let rest for 10 minutes while you make your sauce. Sauce recipe below.

Ingredients
- Drippings form pan that you cooked your steak in
- 1 Shallot, Minced
- 3 Tablespoons Butter
- 4-5 Sprigs of Thyme, Leaves Removed
- 2 Cups Red Wine
- 2 Teaspoons Whole Grain Mustard
- 2 Teaspoons Cornstarch Mixed with 1 Tablespoon Water or Beef Broth
- Splash of Heavy Cream
Instructions
- Place the pan that you cooked your steak in on the stovetop under medium low heat.
- Add the shallot and butter and saute for 2 minutes.
- Add the thyme leaves and red wine and scrape the bits from the bottom of the pan.
- Add the mustard and whisk to combine.
- Make a slurry by combining water and cornstarch. Add the slurry to the sauce and stir to combine. And turn up the heat to medium high. Bring to a simmer to thicken sauce.
- Add cream and stir. Serve over steaks.
