A Brief Introduction to Mexican Anasazi Beans:

Mexican Anasazi beans, also known as “Aztec beans” or “cave beans,” are a type of heirloom bean with a vibrant and visually striking appearance.

They have a maroon and white speckled pattern, making them a culinary gem and a visual delight.

These beans have a long history. They date back to the time of the Anasazi people. The Anasazi people lived in the southwestern United States and northern Mexico.

Anasazi beans taste mild and nutty, and have a creamy texture when cooked. They can be used in many different dishes.

They are a great source of plant-based protein, fiber, and essential nutrients, making them a healthy addition to any meal.

Cooking Mexican Anasazi Beans in the Instant Pot:

Now that you know Mexican Anasazi beans, let’s dive into the exciting part – preparing them in the Instant Pot. This modern cooking method saves you time and retains the beans’ delicious flavor.

Ingredients:

  • Anasazi Beans: You can grab them at some markets or online here. If you can’t find Anasazi beans you can also use pinto beans for this recipe.
  • Butter: I prefer using butter instead of lard.
  • Onion: White onion works the best.
  • Garlic: I like to use the frozen minced garlic for convenience.
  • Oregano: Use dry oregano. Mexican oregano would be preferable.
  • Cumin: Use ground cumin.
  • Salt: I like to use Kosher salt.
  • Beef Broth: Use a good quality beef broth or stock. Homemade is the best, but any good quality store bought beef broth works.
  • Pico De Gallo: Make homemade pico de gallo or buy it from the store for this recipe.

How To Make Mexican Anasazi Beans In The Instant Pot:

  • Rinse and sort the Mexican Anasazi beans to remove any debris.
  • Soak the beans for 3 hours.

  • Set your Instant Pot to “Saute” mode and add butter. Once hot, sauté the onions, garlic, and spices until they become translucent and fragrant.
  • Pour in the drained Anasazi beans and beef broth into the Instant Pot.
  • Secure the lid, set the Instant Pot to “Pressure Cook” mode, and cook on high pressure for 60 minutes. The cooking time may vary depending on the age and size of your beans. Therefore, you may need to make some adjustments.
  • After the cooking cycle completes, allow the pressure to release naturally for about 10 minutes before manually releasing any remaining pressure.
  • Carefully open the lid and check the beans for doneness. They should be tender but not mushy.
  • Top with homemade pico and cilantro for a fresh flavor.

Why the Instant Pot?

Cooking Mexican Anasazi beans in the Instant Pot has several advantages. Firstly, it significantly reduces cooking time compared to traditional stovetop methods, which can take hours.

The Instant Pot’s pressure cooking function ensures that the beans become tender while preserving their flavor and nutrients.

You can use an Instant Pot to add tasty flavors to beans. You can do this by sautéing onions, garlic, and spices in one pot. The result is a delicious and satisfying dish.
