We had these sliders for dinner the other night and they were a huge success. I love a quick weeknight dinner that only takes about 30 minutes to make. Especially with all the sports we have going on.
If you don’t have a pressure cooker just use your crockpot and make the BBQ chicken ahead of time.
You could also make this meal into a 10 minute dinner.
For the 10 minute dinner version use rotisserie chicken instead.
I love using my Instant Pot because it cooks the chicken quickly and I can control the quality of ingredients.
Ingredients You Will Need:
You will only need a handful of ingredients to make this recipe.
Chicken Breasts: I like to use fresh, organic, boneless skinless chicken breasts. You can also use thighs or for a quicker meal a rotisserie chicken.
Barbecue Sauce: Use your favorite brand. I like the Sticky Sweet Stubbs BBQ Sauce.
Hawaiian Rolls or Small Slider Buns: Any small buns will work.
I like using the Hawaiian Rolls because you can cut the whole package in half and layer all your ingredients. This makes it easy to assemble.
You can also use dinner rolls or any slider bun.
Pepper Jack Cheese: I love pepper jack cheese. You can also use regular Monterey jack cheese or cheddar.
Ortega Chiles: The canned Ortega chilies work great. You can use the diced or whole chilies.
Butter: Unsalted or salted butter are fine.
Dry Ranch Dressing Mix: Just buy any dry ranch dressing seasoning packet.
You can also use cooked chicken or rotisserie chicken if you would like. Or add extra ingredients, such as thinly shaved, red onion, cilantro, or pickled jalapeños.

How To Make Instant Pot BBQ Chicken:
Instant Pot barbecue chicken is really quite easy to make.
The base BBQ chicken recipe is made with two simple ingredients; chicken breast and BBQ sauce.
You can use frozen chicken in the Instant Pot or fresh. I prefer fresh because it tends to come out less stringy than frozen.
If you forget to thaw your frozen chicken breasts you can definitely make this with frozen chicken as well.
The chicken is placed in the Instant Pot with a small amount of water and then pressure cooked.
Once the pressure has been manually released you will shred the chicken with either two forks or use hand beaters.
Then mix in the BBQ sauce and stir to combine.
How To Make Instant Pot BBQ Chicken Pull Apart Sliders (Step By Step):
Follow along step by step. Refer to the recipe card section below for all the details.
Start by placing the chicken breast in the Instant Pot with 1/4 cup water.
Seal the lid and turn the vent to the sealed position.
Cook on manual high pressure according to recipe card below.
Manually release the pressure by carefully moving the valve to the venting position.
Then shred the chicken with a hand beater or with two forks.
Add the BBQ sauce and stir to combine.
Line a cookie sheet with parchment paper.
Cut the Hawaiian rolls in half and top with pepper jack cheese, Ortega chilies and the BBQ chicken mixture.
Combine melted butter with dry ranch mix in a small bowl.
Sandwich the two sides together and then brush the top buns with the ranch butter.
Bake for 10 minutes or until golden brown and all the cheese is melted inside.

Par-bake a pre-made pizza dough (I like the one from Trader Joe’s) for about 7 minutes at 400 F.
Top with the Instant Pot BBQ Chicken, Jack cheese, thinly sliced red onion and drizzle with extra BBQ sauce.
Bake at 400 F for 5-7 minutes or until cheese is melted. Top with fresh cilantro.
BBQ Chicken Nachos:
Lay an even layer of tortilla chips on a parchment lined baking sheet.
Top with the Instant Pot BBQ Chicken and shredded pepper jack cheese. Place under the broiler until cheese is melted.
Top with cilantro, sour cream, red onion and pickled jalapeños.

- 1/4 cup diced canned Ortega chilies, drained
- 1/4 cup butter, melted
- 1 teaspoon dry ranch dressing mix
