Roasted broccolini with pecorino and pine nuts is the perfect side dish. This broccolini is full of flavor and cooks up quickly in the oven. 

When I lived in Italy we used to go down to the open air market and grab fresh broccolini at least once a week when it was in season. We cooked it up simply with just olive oil and salt and pepper and it was heaven.

If you want an easy and delicious side dish you got to try this one out! It goes perfectly with my rosemary focaccia bread and Italian Florentine Style Beef Sandwich.

You can also simply grill it, use it in soups or stews or serve it like we are doing today simply roasted and topped with pecorino and pine nuts. 

What Is Broccolini?

So you may be asking yourself what is the difference between broccolini and regular broccoli?

Broccolini is a hybrid vegetable between broccoli and Chinese broccoli. The florets are smaller than regular broccoli but have long edible stalk. This vegetable is perfect for a side dish or can be used in place of broccoli. 

The best part is the stalks are tender and you can eat the whole thing! 

Can I Use Broccoli Instead?

If you need a substitute you can use broccoli instead of broccolini. Although broccolini is widely available in most grocery stores so give it a try. 

How to Roast Vegetables:

Roasting vegetables is my favorite way to prepare them. Roasting uses dry heat to caramelize the sugars naturally present in vegetables. Make sure the temperature is between 400-450 degrees Fahrenheit. 

To roast vegetables first preheat the oven to 425 degrees.

Trim your vegetables or slice them evenly.

Place the vegetables evenly on a rimmed baking sheet in a single layer. Make sure the vegetables are not crowded or you will steam the vegetables instead of caramelizing them.

Drizzle with olive oil, salt and pepper and cook for 10 to 15 minutes or until golden brown.

Roasted Broccolini With Pecorino and Pinenuts

The perfect side dish that is quick and easy!

Ingredients

  • 2 bunches broccolini
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 1/4 cup peccorino cheese, shaved
  • 1/8 teaspoon red pepper flakes


Instructions

  1. Preheat oven to 425 degrees F.
  2. Place the broccolini on a baking sheet.
  3. Drizzle with olive oil and season with salt and pepper. Toss to combine.
  4. Roast for 10-15 minutes or until broccolini is caramelized.
  5. Remove from the oven and top with cheese and pepper flakes.
