My kids new favorite dinner are these veggie packed homemade chicken nuggets. They are super easy to make and healthier than the frozen nuggets you buy at the store.
Who does’t love a good chicken nugget? My kids are huge chicken nugget fans. These homemade chicken nuggets with veggies will fool even your picky eaters. This recipe makes me feel so much better than driving through my nearest Chick-Fil-A (although we still do that sometimes). You can skip the fast food line my friends and make these instead.
These nuggets are perfect for a quick easy dinner. I make double and freeze half for when I don’t have time to make anything. You can even throw them into your kids lunch box for a delicious, healthy lunch. I love to serve mine in the omie box because it keeps things hot.
Veggie chicken nuggets are quick and easy to make. Here is how to make them.
Preheat the oven to 400 degrees F.
Combine the ground chicken, carrots, zucchini, spinach, salt, seasoning, parmesan and garlic powder in a large mixing bowl. Mix with your hands until well combined. Take a golf ball sized amount of meat mixture and form into a small oval shaped nugget and set aside. Continue with the rest of the meat mixture.
Pour the bread crumbs into a shallow bowl. Place the nuggets into the breadcrumb mixture to coat on both sides. Preheat a large non-stick skillet over medium heat and add the oil. Carefully place the breaded nuggets into the pan and cook for 2-3 minutes per side until slightly golden brown.
Remove the nuggets and place on a foil lined baking sheet. Finish cooking the nuggets in the oven for 5-10 minutes or until cooked through. Remove from the oven and season with salt and pepper.

Can I change up the shape of the chicken nuggets?
