How To Use A Wood Burning Pizza Oven:

1. Preparation:

Gather Your Ingredients:

Before you begin, make sure you have all the pizza ingredients prepared and ready to go. This includes pizza dough, sauce, cheese, and your choice of toppings.

Get Quality Wood:

Choose well-seasoned hardwood for your pizza oven, such as oak, hickory, or fruitwood. I love this one! The wood should be cut into small pieces and dry to ensure a clean and efficient burn.

2. Start the Fire:

Arrange the Wood:

Place a small pile of wood in the center of the oven. Create a pyramid shape with the wood, leaving space for air circulation.

Ignite the Fire:

Use kindling or newspaper to ignite the wood. Ensure good airflow by leaving the oven door slightly ajar until the fire is established. Once the fire is burning well, you can add more wood.

3. Build and Maintain the Fire:

Add More Wood:

As the fire burns down, add more wood to maintain a consistent flame. The goal is to achieve a hot and even heat throughout the oven.

Create Ember Bed:

After about 30-45 minutes, allow the flames to subside, and let the wood turn into embers. Push the embers to the back or side of the oven, creating a hot ember bed for cooking.

4. Check the Temperature:

Use a Thermometer:

To ensure the oven is at the right temperature, use an infrared thermometer. The ideal pizza-cooking temperature is around 700-800°F (370-430°C).

Optimal Heat Distribution:

Whether homemade or store-bought, fig jam introduces a layer of complexity that transcends the ordinary.

You do not want to use a rolling pin to roll the dough out. This will release all the air bubbles that make your pizza light.

Ingredients

  • 1 pizza dough
  • flour for dusting
  • 2-3 tablespoons fig jam
  • 1/2 cup five cheese blend
  • 3 thin slices prosciutto
  • 1 cup arugula
  • drizzle balsamic glaze


Instructions

  1. Preheat an oven to 500 F. If you have a pizza stone preheat the stone for at least 20 minutes.
  2. Sprinkle a pizza peel with flour and stretch your douhg to form a large circle.
  3. Spread a thin layer of fig jam onto the dough leaving about a 1 inch boarder.
  4. Sprinkle with cheese and top with proscuitto.
  5. Cook in the oven for 5-10 minutes or until cheese is melted and crust is cooked through.
  6. Remove the pizza from the oven and top with fresh arugula and drizzle with balsamic glaze.
  7. Slice the pizza and serve immediately.
