Lime Juice and Zest: Adds a delicious lime flavor. Make sure to use fresh lime juice and use a microplane to get the bright green part off of the limes.

Cream Cheese: Make sure your cream cheese is at room temperature. This is a very important step. If your cream cheese is cold it will create lumps and the filling will be lumpy.

Powdered Sugar: Helps to add sweetness to the filling.

  • In a mini food processor pulse together the Oreos and pretzels until the mixture is in fine crumbs.

  • Pour the mixture into a mixing bowl.
  • Gradually pour in the melted butter and mix until the mixture resembles wet sand.
  • Press the mixture firmly into a tart pan, ensuring an even layer on the bottom and up the sides. I use a cup to help press the crumbs up the sides of the pan.

  • Place the crust into the freezer for about 10 minutes while you make the filling.

  • Combine the cream of coconut with the gelatin and let sit for a couple of minutes.
