If I am not dunking them into tea or coffee I just can’t eat a super hard biscotti. It cuts the roof of my mouth and who wants that?

Butter: Use a good quality butter. I like to use Kerrygold salted butter. 

Sugar: Use granulated sugar. 

Egg: Make sure your your eggs are at room temperature. 

Flour: Use orange all purpose unbleached flour.

Baking powder: Make sure your baking powder isn’t expired. This will help make your cookies rise. 

Salt: Use iodized salt. 

Orange Zest: You definitely don’t want to skip this ingredient. To zest the orange use a microplane

Cranberries: Use dried cranberries. 

Almond Emulsion: You can also use almond extract, but almond emulsion is stronger and more flavorful. If using extract use 1 full teaspoon. 

How To Make Cranberry Orange Biscotti: 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, baking powder, and salt.
  • In a stand mixer beat the butter and sugar together until well combined.

  • Add the eggs one at a time and almond emulsion. 
  • Add the cranberries and orange zest. 
  • Combine the wet and dry ingredients, mixing until a dough forms.
  • Shape the dough into a log on the prepared baking sheet.
  • Bake for 25-30 minutes or until the log is golden brown.

  • Allow the logs to cool for 10 minutes, then slice them into diagonal pieces.
  • I like to serve them at this point but if you want a more traditional biscotti arrange the slices back on the baking sheet and bake for an additional 10-15 minutes, or until the biscotti are crisp.
