Shallot: Shallots are slightly sweeter and a little less potent than a normal onion. You can also use red onion if needed. 

Roasted Red Peppers: I use the jarred roasted red peppers. This is a convenient item. 

Garlic: I like to use fresh garlic for this recipe. 

Capers: Capers add a delicious salty brininess for the dish. 

Mint: Mint adds a delicious freshness to this dish. You want to use fresh mint. 

Parsley: Use fresh flat leaf parsley for this dish. 

Lemon Juice and Zest: Fresh lemon juice and zest adds a delicious acidity.

Ingredients

  • 2 pounds green beans, cleaned
  • 1 cup jarred roasted red bell peppers, drained, sliced thin
  • 1/2 cup green olives, roughly chopped
  • 1 shallot, minced
  • 1/2 cup parsley, roughly chopped
  • 2 tablespoons fresh mint, roughly chopped
  • 1 lemon zested and juiced
  • 2 cloves garlic, minced
  • salt and pepper to taste
  • 1/4 cup extra virgin olive oil
  • 1/2 cup shredded parmesan cheese


Instructions

    1. Bring a pot of salted water to a boil.
    2. Add the trimmed green beans and cook for 2-3 minutes until they are crisp-tender. Quickly transfer the green beans to an ice bath to stop the cooking process.
    3. In a small bowl combine the bell peppers, green olives, shallot, parsley, mint, lemon zest and juice, garlic, salt and pepper and olive oil. Mix to combine.
    4. Place the green beans in a serving dish.
    5. Toss with the salsa and top with shredded parmesan cheese.

Notes

To make ahead place the blanched green beans in a ziplock bag and combine the salsa and store in an airtight container. When you are ready to serve toss together.
