These healthy lemon poppyseed muffins with almond and raspberry are not only super easy to make but they are delicious and beautiful! I serve these for breakfast or dessert and they are perfect for a girls get together or bridal shower.

These muffins are so easy to make and use a little help from my favorite Kodiak Cake mix.
 
I love muffins like this because they are packed with protein and you can change up the flavors with whatever fresh berries you can find in the supermarket.

Here are the ingredients you will need for this easy muffin recipe.

Kodiak Cake Almond Poppy Seed Flapjack Mix
Sugar
Vegetable Oil
Egg
Plain Greek Yogurt
Milk
Lemon Zest
Fresh Raspberries
Sliced Almonds

Variations:
You can make these muffins with many different variations changing up the raspberries with blueberries, strawberries or even substitute 1/2 of the milk with orange juice for an orange variation.

Make Ahead:

If you are looking for a quick and easy semi-homemade muffin recipe this is for you! You can make the muffins ahead and pop them in the freezer for an easy on-the-go breakfast or snack option. Just pop them in the microwave for 30 seconds or so to reheat.

Storage:

I love storing these muffins in an air tight container for up to 3 days at room temperature or you can freeze them as well. 

If you are going to freeze I would leave off the glaze until you have thawed or reheated them.

Lemon poppyseed muffins with raspberry

Lemon Raspberry Almond Poppy Seed Muffins

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

Quick and easy lemon raspberry muffins.

Ingredients

  • 1 3/4 Kodiak Cake Almond Poppy Seed Flapjack Mix
  • 1/2 Cup Sugar
  • 1/3 Cup Vegetable Oil
  • 1 Egg
  • 1/2 Cup Plain Greek Yogurt
  • 1/4 Cup Milk
  • 1 Teaspoon Lemon Zest
  • 1 Cup Fresh Raspberries
  • 1 Tablespoon Sliced Almonds

Glaze:

  • 1/2 Cup Powdered Sugar
  • 2 Tablespoons Fresh Lemon Juice


Instructions

    1. Combine kodiak mix with sugar, oil, egg, yogurt, milk and lemon zest in a mixing bowl and mix to combine. 
    2. Fill muffin tins paper liners and fill 3/4 full and add 3 fresh raspberries to each muffin. 
    3. Bake at 375 for 14-16 minutes.
    4. Combine glaze ingredients.  Top muffins with extra fresh raspberries, sliced almonds and glaze.
