- 1.5 Pounds Salmon
- olive oil
- 1 lemon, zested
- salt and pepper to taste

- 3 Heirloom tomatoes
- 1/2 cup parsley, roughly chopped
- 2 tablespoons chives, roughly chopped
- 2 cloves garlic, minced
- 1 tablespoon white vinegar
- 1/4 cup extra virgin olive oil
- salt to taste
- Peheat a grill to medium high heat.
- Place the salmon skin side down on heavy duty foil. Drizzle with olive oil, lemon zest and season with salt and pepper.
